Sweet Potato baked with Lemon Juice Recipe

Sweet Potato is high in Carbohydrate and can be a substitute for rice.

Ingredients:
2 Large Sweet Potatoes – Remove skin and cut it as wedges
50grams Fresh Butter
1 Bunch Coriander Leaves = Chopped
1/4 cup Lemon Juice

Method:
Preheat oven to 200°C or 180°C fan. Season sweet potato with salt and pepper. Heat fresh butter in a saucepan and pour over sweet potato. Pour Lemon juice and toss sweet potato to combine. Sprinkle chopped Coriander leaves over sweet potato and bake for 30 minutes. Cook potato until it is tender and serve hot.
