Tomatoes And Eggplant Pie For Dinner

Tomato is known as a plant of the nightshades family, while potatoes and eggplant being cousins of tomato. Tomato is a good source of Lycopene which is vital in anti-oxidant. One glass of tomato juice everyday is good to keep a person healthy for life. Tomato is commonly used as a vegetable in cooking and meals, although it is classified as a fruit by US tariffs. 

 

Ingredients:

2 large tomatoes

2 egg plants

1 large onion – chopped

1 tablespoon butter

5 tablespoons cheese

½ teaspoon crushed pepper

¼ teaspoon salt

3 tablespoon blended kidney beans paste

 

Method:

Skin off egg plants and cut into 2 cm’s thick and fry slightly in butter. Then fry chopped onion and peel the tomatoes and slice it. Next, butter the pie container and arrange alternate layers of tomatoes, onion and eggplant in the container. Include kidney beans paste in the middle of the alternate layers of vegetables. Add on the flavours by sprinkling cheese, crushed pepper and salt on top of the pie. Finally, add on bit butter on top of the pie and bake in oven for 10 to 15 minutes.
