Sautéed Eggplant Recipe For Simple Cooking

Eggplant is also known as Aubergine or Brinjal and it is a plant of the nightshades family. Eggplant is a good source of potassium, fiber, magnesium, niacin, vitamin B1 and B6. Eggplant is commonly used as a vegetable in cooking and meals. 

 

Ingredients

1 Eggplant

1 medium sized onion – chopped

2 cube butter – for frying

½ tablespoon curry powder @ masala

¼ tablespoon turmeric powder

2 tablespoon lemon juice

Pepper to taste

Salt to taste

2 stalk coriander leaves – chopped finely

 

Method

Cut egg plant into 2 cm’s thick in slanting manner. Marinate egg plant with salt and leave for 10 minutes and sauté in butter till it’s brown. Cook the chopped onion on frying pan with the remaining cube of butter and add curry powder and turmeric powder to the ingredients. Then, add in the pepper and lemon juice to the onion and stir. Finally, add in the egg plant slices into the onion gravy and garnish with chopped coriander leaves.
