Vegetarian gingerbread man cookie recipe for ChristmasDuring festive season, it can be hard at times if you are a vegetarian or vegan. Most of the cookies or cake has eggs in it and it is sad that sometimes the strict vegetarian or vegan would not consume it.

I have friends from various strict religious background. Even if the vegetarian cookies were baked in the premises where egg was used in other cookie recipe but may contain traces due to the same manufacturing belt, they don’t eat.

Most of us would love to have gingerbread man cookie for Christmas and now everyone can enjoy the cookie without a guilt.

Vegetarian gingerbread man cookie recipe for Christmas

Ingredients:

2 cups organic plain flour
2 tsp baking powder
2 tsp ginger powder
1 tsp mixed spice or Pudding Spice or Pumpkin Pie Spice
1 tsp of ORGRAN No Egg™ Egg Replacer
125gms unsalted butter
1 tsp honey
50g raw sugar

Method:

  1. Beat the butter and sugar until soft and fluffy in the mixer.
  2. Then, beat in the egg replacer and honey together.
  3. After that, add in the sifted flour, baking powder, ground ginger and mixed spice.
  4. Remove the mixed dough from mixer and knead on a flat surface with little flour sprinkled at the bottom. Note: Add a little more flour if dough is too soft.
  5. Wrap dough in cling wrap and let it rest in the fridge for 40 minutes.
  6. Roll out dough between two sheets of baking paper on a flat surface using rolling pin.
  7. Cut gingerbread man shapes using cookie cutter.
  8. Finally, bake at 180°C for 10 minutes in fan force heat oven.

Note: Keep a check on the oven heat as it varies from oven to oven.
