Ingredients:
80gm flour
1/4 teaspoon cinnamon powder
Pinch of grated nutmeg
1/4 teaspoon of grated orange skin
80gm brown sugar
80gm breadcrumbs
120gm butter out from freezer
120gm raisins
120gm mixed sweet fruit with cheeries
3 tablespoon Honey
3/4 lemon juice and grated skin
Method:
Sieve the flour, cinnamon and nutmeg into a bowl and stir with breadcrumbs and sugar. Mix the butter and stir the ingredients. Add on, grated orange skin,lemon skin,raisins, mixed fruit. Whisk honey with lemon juice and mix all together.
Grease pudding trays and scoop Christmas pudding mixture into it. Cover pudding with greaseproof paper. Steam pudding for 2.5 hours until it is dark brown. It will not be that firm as we are not using egg. Leave it to cool. Pudding tastes better as it matures.
