Coconut Rice Recipe for Healthy, Vegetarian and High Calorie requirement personnel

Coconut contains high calorie and at times it is adviced to substitute coconut milk with Low fat skim milk in cooking. As the saying goes “Too much of anything in life, is hazardous to life”. Consuming coconut moderately should not be a problem. Especially, field workers such as fruit pickers should not worry consuming coconut.  

Ingredients:
 
1 cup long grain rice
1 cup shredded young coconut
1 Tablespoon Oil
1/2 Teaspoon Mustard seeds
1 Teaspoon Urad dhal
1 Stem Curry Leaves
2 Fresh Green Chillies – sliced diagonally
An inch Ginger – chopped
Salt to taste
2 Cups Water
 
Method:
Cook the rice in rice cooker and let it cool down.

Heat oil in pan and add mustard seeds, urad dhal, curry leaves, ginger, chillies and stir them. Add coconut and salt to the mixture and ensure the coconut in not overcooked. Add rice to the mixture and mix them together with a spatula.
