Pineapple Fried Rice Recipe For Two

Pineapple is a good source of Fiber Vitamin A, Vitamin C and Potassium. Pineapple juice was one of my favourite and back in 1900’s I could only get it in the flight journeys traveling from Borneo to Peninsular Malaysia.

 

Ingredients:

3 cups cooked white rice

2 cups cubed fresh pineapples

1 tablespoon sesame cooking oil

1 sliced shallot

½ cup diced fresh carrots

½ cup peas

2 tablespoon chopped chives

¼ cup brown sugar

1 tablespoon light soy sauce

A pinch of salt

 

Method:

Pour sesame oil into the cooking pan and sauté shallot till its light brown. Sprinkle the brown sugar into the pan and stir the pineapple together till the pineapple is half cooked. Next, put in the carrots and peas and stir together. Then, sprinkle the salt to the ingredients and mix the cooked rice together with the ingredients. After that, sprinkle soy sauce and stir the pineapple fried rice. Finally, dress the chopped chives on top of the pineapple fried rice before serving.
