Potato And Broccoli Soup For a Vegan’s Romantic Dinner

Potato and Broccoli Soup for a Vegan’s romantic dinner. Being a vegetarian does not mean you have to avoid your romantic dinners because there is not many vegetarian western food out there. It’s more romantic to have a dinner at home than restaurant’s.

Ingredients

  • 1 big onion chopped
  • 2 tablespoons olive
  • 200 grams broccoli sliced to small pieces (Spare few pieces for decoration)
  • 2 potatoes cut into small pieces
  • 100 grams bleu cheese
  • 1 liter vegetable stock
  • 200 ml fresh cream
  • A pinch of chilli flakes
  • Salt and Sarawak pepper to taste

Method

Pour a considerable amount of oil in the saucepan and stir the onion first in a light fire. Add in the potatoes when the onion turns slightly brown and stir constantly for around 4 and ½ minutes.
Cut the pumpkin into cubes. Melt butter in the pan at medium heat. Fry garlic and onion slightly, add the pumpkin and stir for 5 minutes in medium heat. Then, add in the bleu cheese and broccoli into the pan. Add in the vegetable stock and boil the soup. If the heat is high, reduce it and cover the pan while allowing a considerable of time for the potatoes to be tendered.

Allow the soup the cool down before transferring it to the blender to be blended. Blend the soup and use strainer to strain of the vegetables particles. Pour the puree to the saucepan and stir in the fresh cream. Sprinkle the chilli flakes on top of the creamy soup, while adding salt and pepper to taste.

Meanwhile, steam the remaining broccoli and sprinkle slight salt on it. Finally, pour the creamy soup into 2 bowls and arrange the decorative broccoli on top of it.

Suggestion:
Replace chilli flakes with paprika for a smother sprinkle on the creamy soup. Natural yoghurt can be used as a substitute for fresh cream.
