Tomato Rice recipe for functions and anniversary

Tomato rice has mix flavour of tangy tomatoes and less spicy taste for an interesting meal.

Ingredients :
3 Red Fresh Tomatoes – Sliced
1 cup Basmati Rice – Cooked and let it cool
1 Small Onion chopped
1 inch Ginger – finely chopped
Salt to Taste
1/2 Teaspoon Turmeric powder
1 Teaspoon Chilli Powder   
1 Teaspoon Cumin Seed Powder  
2 Teaspoon Corriander Seed Powder
1/4 Teaspoon Mustard Seeds
3 Tablespoon Vegetable Cooking Oil.
A little Corriander Leaves – Chopped
 
Method:
Heat the Oil in the Pan add Mustard Seeds and Onion, fry till it is light brown. Then, add ginger, tomatoes, salt, tumeric and continue stirring. Add all the powders and continue stirring. Once the tomatoes are soft and cooked, add the rice and stir till it is well blend. Finally, garnish chopped corriander leaves and serve hot.
