Spicy Mango Salad Recipe To Go With Pineapple Rice For Two

Sweet mangoes are delicious and marvelous. There is various health benefits associated to mango, especially the vitamins such as Vitamin A and Vitamin C. Asthma patients should avoid Mango. You may have mangoes occasionally maybe on a sunny day. I am an asthmatic patient myself, and there is 1 mango tree in my grand mom’s house which bears 1 of the sweetest mango I ever had. The doctor has told me to keep away from mango as it is bad for asthma patients. I have not done research on this area yet.

 

Ingredients

1 Medium sized half ripe mango

3 Shallots

½ young gingers

3 Bird’s eye chilli

Salt to taste

10ml Lemon juice

20gm sugar

25gm fried grated coconut

10 ml Corn oil

 

Method

Grate the mango and ginger into a container. Slice the shallots finely and chop the bird’s eye chilli. Marinate the mango with all the ingredients, season with lemon juice, salt and sugar. Finally, serve it cold with pineapple rice for a delicious meal.
